Ingredients
  

4 boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon balsamic vinegar

1/4 cup olive oil

Salt and pepper to taste

Fresh mozzarella, sliced (optional, for topping)

Instructions
 

Begin by preheating your oven to 375°F (190°C).

    In a large bowl, combine the halved cherry tomatoes, minced garlic, olive oil, dried oregano, balsamic vinegar, chopped basil, and a pinch of salt and pepper. Stir until all ingredients are well mixed.

      In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Season the chicken breasts with salt and pepper on both sides.

        Once the skillet is hot, add the chicken breasts and sear for about 5 minutes on each side until they're golden brown.

          After searing, pour the tomato and basil mixture over the chicken in the skillet, ensuring all pieces are well coated. If you’re using fresh mozzarella, place the slices on top of the chicken.

            Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked through (165°F or 75°C internal temperature) and the tomatoes are bubbly.

              Once done, remove from the oven and let rest for 5 minutes before serving. Garnish with additional fresh basil if desired.
