12 ounces pasta (fusilli or penne works well)

2 medium onions, thinly sliced

3 cloves garlic, minced

4 cups vegetable broth

1 tablespoon balsamic vinegar

1 teaspoon sugar

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon dried thyme

1 teaspoon rosemary, chopped

1 cup grated Gruyère cheese (or a good melting cheese of choice)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

In a large pot, heat the olive oil and butter over medium heat. Add the sliced onions and sugar; sauté until the onions are caramelized and golden brown, about 15-20 minutes. Stir occasionally to prevent burning.

    Add the minced garlic, dried thyme, and rosemary to the pot. Cook for another 2-3 minutes until fragrant.

      Pour in the vegetable broth and balsamic vinegar, stirring to combine. Season with salt and pepper.

        Add the pasta to the pot, ensuring it’s submerged in the liquid. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
