3 large onions, thinly sliced

4 cups vegetable broth

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon garlic powder

½ teaspoon sugar

Salt and pepper to taste

1 cup shredded Gruyère cheese (or a mix of Gruyère and mozzarella for melting)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil and butter over medium heat. Once melted, add the sliced onions and sprinkle with sugar. Cook the onions gently, stirring frequently, for about 15-20 minutes until they are caramelized and golden brown.

    Add the garlic powder and thyme to the caramelized onions, stirring for about 1 minute until fragrant.

      Pour in the vegetable broth and bring to a simmer.

        Add the uncooked pasta into the pot, making sure it's submerged. Season with salt and pepper. Allow it to cook according to pasta package instructions, stirring occasionally to prevent sticking, until al dente. This usually takes about 10-12 minutes.

          Once the pasta is cooked, remove the pot from the heat and stir in the shredded Gruyère cheese until melted and creamy.

            Taste and adjust the seasoning if necessary, adding more salt, pepper, or thyme if desired.
