Instructions
Heat olive oil in a large skillet over medium heat. Add the sliced onion and bell pepper, sautéing until they are softened and slightly caramelized, about 5-7 minutes. Season with salt, pepper, and garlic powder.
Push the vegetables to the side of the skillet. Add the thinly sliced beef to the skillet, cooking until browned, about 3-5 minutes. Mix the beef with the veggies and remove from heat.
Stir in the softened cream cheese until melted and fully combined with the meat and veggies.
Lay a large lettuce leaf flat on a clean surface. Spoon 1-2 servings of the beef mixture onto the leaf. Top with a generous sprinkle of shredded provolone cheese.
Carefully roll the lettuce around the filling, creating a wrap. You can secure it with a toothpick if needed. Repeat with the remaining lettuce leaves and filling.
Enjoy immediately as a fresh roll-up or place in a grill pan for 1-2 minutes to warm and slightly melt the cheese, if desired.
