2 large red onions, thinly sliced

1 cup apple cider vinegar

1 cup water

1 tablespoon sugar

1 tablespoon sea salt

1 teaspoon black peppercorns

1 teaspoon mustard seeds

1 teaspoon crushed red pepper flakes (optional for spice)

2 cloves garlic, crushed

Instructions
 

Start by preparing the red onions: Peel and thinly slice them using a sharp knife or mandoline. Set aside.

    In a medium saucepan, combine the apple cider vinegar, water, sugar, and sea salt. Heat over medium heat, stirring until the sugar and salt are fully dissolved.

      Add the black peppercorns, mustard seeds, crushed red pepper flakes, and crushed garlic cloves to the saucepan. Bring to a gentle simmer for about 2-3 minutes.

        Once the mixture is heated, remove it from the heat and let it cool for a few minutes.

          In a clean, sterilized jar, layer the sliced onions. Pour the warm pickling liquid over the onions, ensuring they are fully submerged.

            Let the jar cool to room temperature, then seal it tightly with a lid.

              Refrigerate the pickled onions for at least 24 hours before using, allowing the flavors to develop further.
