Ingredients
  

1.5 pounds baby potatoes, halved

1/4 cup fresh cilantro, chopped

4 cloves garlic, minced

1/3 cup olive oil

2 tablespoons lime juice

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: Zest of 1 lime for added brightness

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the halved baby potatoes with olive oil, minced garlic, lime juice, ground cumin, smoked paprika, salt, and pepper. Toss until the potatoes are well-coated.

      Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.

        Roast the potatoes in the preheated oven for 20-25 minutes, or until they are golden brown and fork-tender, flipping them halfway through for even cooking.

          Once the potatoes are done roasting, remove them from the oven and immediately toss them with the chopped cilantro. If using, add the lime zest at this stage for an extra zing.
