2 ripe peaches, peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1/4 cup unsalted butter, softened

1/2 cup buttermilk

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup brown sugar

1/4 cup rolled oats

1/4 cup chopped walnuts (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Beat in the eggs one at a time, then add the buttermilk and vanilla extract, mixing until well combined.

        In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

            Gently fold in the diced peaches to the batter.

              Pour the batter into the prepared cake pan and set aside.

                In a small bowl, combine brown sugar, rolled oats, and chopped walnuts (if using) to make the crumb topping. Mix until crumbly.

                  Sprinkle the crumb topping evenly over the batter in the cake pan.

                    Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                      Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
