Instructions
In a large pot or Dutch oven, heat the extra virgin olive oil over medium heat until shimmering.
Add the bite-sized chicken pieces to the pot, seasoning them with the Italian herb blend, salt, and freshly cracked black pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken turns golden brown and is cooked through (no longer pink in the center).
Stir in the minced garlic and sauté for about 1 minute, or until fragrant, taking care not to burn the garlic.
Pour in the low-sodium chicken broth, raising the heat slightly to bring it to a gentle simmer.
Once simmering, add the uncooked penne pasta to the pot. Stir well to ensure all pasta is submerged in the broth. Cover, and let it cook for approximately 10-12 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the broth.
Once the pasta is cooked, reduce the heat to low and incorporate the heavy whipping cream and freshly grated Parmesan cheese. Stir until the cheese is melted and the sauce is creamy, creating a luscious consistency.
Gently fold in the chopped fresh spinach and the sun-dried tomatoes (if using). Cook for another 2-3 minutes, allowing the spinach to wilt and integrate into the dish.
Taste your pasta and adjust the seasoning as needed, adding additional salt or freshly cracked pepper to enhance the flavors.
Serve hot, garnished with finely chopped fresh parsley and extra Parmesan cheese for a touch of elegance and flavor.
