Instructions
In a medium bowl, toss the diced apples with a sprinkle of cinnamon and set aside to allow the flavors to meld.
In a large mixing bowl, combine flour, granulated sugar, baking powder, ground cinnamon, nutmeg, and salt. In another bowl, whisk together the milk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples until evenly coated in the batter.
In a deep skillet or frying pan, heat vegetable oil over medium heat to about 350°F (175°C). You want enough oil for the fritters to float a bit while frying.
Using a spoon or small ice cream scoop, carefully drop batter into the hot oil. Fry in batches to avoid overcrowding, cooking about 2-3 minutes on each side or until golden brown. Use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain excess oil.
While still warm, dust the fritters generously with powdered sugar to give them a sweet finish.
