Instructions
In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente. Once cooked, drain the pasta in a colander and set aside, reserving a small cup of pasta water in case you need to loosen the sauce later.
In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced Andouille or smoked sausage. Sauté for about 5-7 minutes or until the sausage is nicely browned and has begun to crisp edges.
Incorporate the diced bell pepper and chopped onion into the skillet. Continue to sauté for an additional 3-4 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
Add the minced garlic to the skillet and cook for about 1 minute, stirring often, until fragrant and lightly golden.
Lower the heat to a gentle simmer, then carefully pour in the heavy cream. Stir well to combine and allow it to warm through, avoiding boiling.
Gradually sprinkle in the grated Parmesan cheese, Cajun seasoning, and smoked paprika. Stir continuously until the cheese melts completely and the sauce becomes rich and creamy. Taste and adjust the seasoning with salt and freshly cracked black pepper as desired.
Add the drained fettuccine to the skillet, tossing it gently in the sauce to ensure each strand is well coated. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency. Allow it to heat through for about 2 minutes.
Remove the skillet from heat and give the pasta a final toss. Sprinkle generously with chopped fresh parsley for a burst of color and freshness before serving.
Notes
Serve in deep, wide bowls with extra Parmesan and fresh parsley. Pair with garlic bread.
