1cupchicken broth
8ozfettuccine or pasta of choice
1cupcherry tomatoes, halved
1cupgrated Parmesan cheese

Instructions
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
In a bowl, evenly coat the chicken pieces with Cajun seasoning.
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and sauté for about 5-7 minutes until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, add the sliced bell pepper, diced onion, and minced garlic. Sauté for about 3-4 minutes until softened.
Reduce heat to medium, then add the chicken broth and let it simmer gently. Pour in the cream and let the mixture thicken for 3-5 minutes. Stir in the halved cherry tomatoes and cooked chicken.
Add the cooked pasta to the skillet and mix well. Add a splash of the reserved pasta water to achieve desired creaminess. Stir in the grated Parmesan until melted and well combined. Season with salt and pepper to taste.
Serve the Cajun chicken pasta in bowls. Garnish with fresh chopped parsley for added color and flavor.
Notes
Serve the pasta in deep plates and add extra Parmesan and whole cherry tomatoes on top for an appealing look.
