1 pound large shrimp, peeled and deveined

2 tablespoons blackening seasoning (store-bought or homemade)

2 tablespoons olive oil

1 cup brown rice or quinoa, cooked

1 cup corn, fresh or frozen

1 red bell pepper, diced

1 avocado, sliced

1 cup cherry tomatoes, halved

1 lime, juiced

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

Prepare the Shrimp: In a mixing bowl, toss the shrimp with blackening seasoning until well coated.

    Cook the Shrimp: In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned shrimp in a single layer. Cook for 2-3 minutes on each side until they are opaque and have a nice char. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the diced red bell pepper and corn. Sauté for about 3-4 minutes until the bell pepper is tender but still crisp. Season with salt and pepper to taste.

        Assemble the Bowls: In serving bowls, layer the cooked brown rice or quinoa as the base. Top each bowl with sautéed corn and bell pepper mixture, followed by blackened shrimp, sliced avocado, and cherry tomatoes.

          Finish with Lime: Drizzle fresh lime juice over each bowl and garnish with chopped cilantro.
